Homemade Soda

I got this book out of the library the other day.  It is so awesome, I think I'm going to have to buy it.
 It has recipes for root beer and tonic water, and easier stuff like cream sodas and herbal waters.  The first recipe I have tried from it is "Peanut Cream Soda".  It sounds a little strange, but trust me it is totally delicious.  It tastes like peanut butter ice cream.  Yum.

Peanut Cream Soda
from Homemade Soda by Andrew Schloss

3/4 cup sugar
1/2 cup water
3/4 cup half-and-half
1/4 cup smooth natural peanut butter
1/2 teaspoon vanilla extract

Combine the sugar and water in a small saucepan.  Bring to a boil, then remove from the heat and stir in the half-and-half and peanut butter.  Let cool to room temperature.  Stir in the vanilla.
For one serving, combine 1/2 cup of the peanut syrup with 1 cup of seltzer and stir just until blended.  Add ice if desired.  

The syrup should make enough for 3 servings, and keep refrigerated for 2 months.
